Mom'S Pickle Beets

  • 2 c. dark vinegar
  • 1 c. water
  • 1 1/2 c. sugar
  • pickling spice
  • 1 gal. or so small beets

Directions

    Prepare beets and cook until tender enough to stick a fork in easily.

    Fill quart jars with beets.
  3. 3
    Now heat vinegar, water and sugar; boil 10 minutes.

    Put 1 teaspoon pickling spice on top of beets in each jar.
  5. 5
    Pour boiling vinegar mixture to cover beets. Seal immediately.
