- 1 large ripe banana
- 1/2 c. sugar
- 1/2 c. packed brown sugar
- 1/2 c. soft butter or margarine
- 1/2 tsp. vanilla
- 1 egg
- 1 c. all-purpose flour
- 1 tsp. baking powder
- 1/3 c. chopped nuts
- 1/2 c. coconut (optional)
Directions

1Preheat oven to 350°.

2In large bowl, beat banana, both sugars, butter, cinnamon and vanilla.

3Beat in eggs.

4Sift flour and baking powder; add to banana mixture.

5Add coconut and stir until well blended.

6Spread into greased 13 x 9 x 2-inch baking pan.

7Sprinkle with nuts.

8Bake for 25 minutes.

9Cool and cut into bars.
