  • 1 Tablespoon Butter
  • 4 whole Eggs
  • 1/2 teaspoons Salt
  • 1/4 teaspoons Pepper
  • 4 slices Whole Wheat Bread
  • 1 Tablespoon Mayonnaise, If Desired
  • 1/2 cups Kerrygold Dubliner (sharp Cheddar) Cheese, Shredded
  • 4 slices Bacon, Cooked And Sliced In Half
  • 1 whole Avocado, Peeled, Seeded And Sliced
  • 1/4 teaspoons Garlic Salt

Directions

    Melt butter in a skillet and add eggs. Break yolks, season with salt and pepper and cook hard. Meanwhile, toast bread and spread with mayo, if desired. Onto one piece of toast, layer 2 eggs and sprinkle with half of the Dubliner cheese, 2 slices of bacon, half of the avocado, and sprinkle with garlic sal. Top with another piece of toast and cut in half diagonally. Repeat for second sandwich.
