- 6 chicken breasts, boneless
- 1 stick butter
- 1 c. chopped mushrooms
- 1/2 c. chopped scallions (green onions)
- 1/2 c. white wine
- 1 c. chicken broth
- 1 tsp. each: garlic, salt, pepper, chili powder and lemon pepper
- 1/2 c. flour (to coat chicken)
- 1 c. Monterey cheese, shredded
Directions

1Flour chicken and brown in melted butter 3 to 5 minutes on each side.

2Remove from pan and place in 9 x 13-inch baking dish. In the pan with butter, add mushrooms and onions; saute about 10 minutes.

3Add spices, chicken broth, wine and 1/4 cup cheese. Cook until thickens.

4Pour over chicken and cover with 3/4 cup cheese.

5Bake at 350° for 1 1/2 hours.
