Montgomery Lemon Pie

Ingredients

  • juice of 2 lemons
  • 1 c. molasses
  • 2 eggs
  • 1 pt. water
  • 2 Tbsp. flour
  • 1 c. sugar
  • 2 eggs
  • 3/4 c. butter
  • 2 tsp. baking powder
  • approximately 2 to 2 1/4 c. flour (enough to make stiff batter)

Directions

    Line 2 pie pans with pastry.

    Mix the first 5 ingredients in medium mixing bowl; beat well.

    Pour into pie pans.

    Mix the sugar, 2 eggs, butter, baking powder and flour in a separate bowl. Spoon over lemon mixture in pie pans.

    Bake at 325° for approximately 45 minutes, or until toothpick comes out clean when inserted in cake mixture.
