- 1 small red pepper
- 1 small green pepper
- fresh ginger root
- shelled walnuts
- peanut or vegetable oil
- margarine or butter
- honey
- lemon and/or lemon juice
- paprika
- fresh parsley
Directions

1Clean and drain scallops.

2Add lemon juice; allow to drain. Larger scallops should be cut into bite size pieces.

3Cut the red pepper into short, thin slices; place on the side.

5Cut the ginger root into short, very thin slices (about 1 tablespoon).

6Avoid using the outer skin of the root.
