- 3 tablespoons olive oil
- 1/2 teaspoon salt
- 1 medium onion, sliced
- 2 large fresh tomatoes, chopped
- 2 garlic cloves, chopped
- 1 1/2 cups celery, chopped
- 2 lbs moose, cubed
- 1 cup sliced mushrooms
- 1 teaspoon paprika
- 1/4 cup flour
Directions

1Saute onion and garlic in oil.

2Add meat and paprika.

3Cover and cook over medium heat until meat is brown.

4Add tomatoes and celery.

5Cover and simmer 1 hour.

6Add mushrooms.

7Cover and cook until meat is tender, about another hour.

8Thicken liquid with flour and water paste.

9Serve over polenta or cooked noodles.
