- 2 c. all-purpose flour
- 1 1/2 c. sugar
- 2 tsp. baking soda
- 1 tsp. ground cinnamon
- 1/2 tsp. salt
- 2 c. grated carrots
- 1/2 c. raisins
- 1/2 c. coconut
- 1/2 c. chopped pecans
- 1 (8 oz.) can crushed pineapple, drained
- 1 c. vegetable oil
- 3 large eggs, lightly beaten
- 2 tsp. vanilla
Directions

1Combine first 5 ingredients in a large mixing bowl; stir in carrots and next 4 ingredients.

2Make a well in center of mixture. Combine vegetable oil and remaining ingredients.

3Add to flour mixture, stirring until moistened.

4Place paper baking cups in muffin pans.

5Spoon batter into paper cups, filling 2/3 full. Bake at 350° for 25 minutes or until golden brown.

6Remove from pans immediately.

7Makes 22 muffins.
