- 2 c. flour
- 1 1/4 c. sugar
- 2 tsp. baking soda
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 2 c. grated carrots
- 1/2 c. raisins
- 1/2 c. shredded coconut
- 1/2 c. chopped pecans
- 3 eggs
- 1 c. vegetable oil
- 1 apple, cored and shredded
- 2 tsp. vanilla extract
Directions

1In large mixing bowl, combine flour, sugar, baking soda, cinnamon and salt.

2Stir in raisins, carrots, coconut and pecans. In separate bowl, combine eggs, oil, apple and vanilla.

3Add to flour mixture.

4Stir only until combined.

5Spoon into greased or paper-lined muffin tins.

6Bake at 350° for 15 to 18 minutes. Makes about 18 muffins.
