  • 500g grams French Prunes
  • 125 milliliters Olive oil
  • 30ml (2tbsp) milliliters Pure Clear Honey
  • 1 piece Red Onion (peeled and sliced)
  • 3 clove Garlic (roughly chopped)
  • 5 milliliters Ground cumin (1tsp)
  • 15 milliliters Capers (1 tbsp)
  • 5 milliliters Fresh ginger (freshly grated) 1 tsp
  • 100 grams Black Olives (pitted)
  • 225 milliliters Dry white wine
  • 30 milliliters Fresh coriander (chopped)2 tbsp
  • 4 piece Boned Chicken Breasts
  • 1/2 piece hot green pepper

Directions

    Remove skin from chicken and place chicken in ovenproof casserole. Add prunes

    Place olive oil in a jug. Add honey, onion, garlic, cumin, capers and ginger and mix together

    Pour mixture over chicken and prunes. mix well. add remaining ingredients and mix thoroughly

    Leave to marinate for 30 min. Place chicken in preheated oven 180c for 45min or until thouroughly cooked
