Ingredients
- 1- 1/2 pound Boneless, Skinless Chicken Thighs
- 13 cups Olive Oil
- 1/2 whole Lemon, Juiced
- 3/4 teaspoons Cumin
- 1/2 teaspoons Cinnamon
- 1/2 teaspoons Corriander Seed, Ground
- 1/2 teaspoons Ginger
- 1/2 teaspoons Salt
- 1/4 teaspoons Cloves
- Freshly Ground Pepper
- 1/2 teaspoons Umami Paste
- 1 Tablespoon Honey
- 1 Tablespoon Olive Oil
- 1 whole Large Sweet Onion, Thinly Sliced
- 1/2 cups Raisins
- 1 Tablespoon Sugar
- 3 whole Cloves
- 1 whole Cinnamon Stick
- 1/4 teaspoons Each Pepper, Ginger And Nutmeg
- 1 package Couscous, 10 Oz. Package
- Chicken Broth - Use The Amount Specified On The Couscous Package, Instead Of Water
- 1 leaf Bay Leaf
- Salt And Pepper, to taste
- Cooked Carrots, For Serving (optional)
- Parsley, To Garnish
Directions

1In a medium-sized bowl mix together all of the ingredients for the marinade (everything except chicken).

2Place chicken in a Ziploc bag and pour in marinade.

3Seal the bag and let it sit for 6-8 hours in the refrigerator.

4Then remove chicken from the bag and discard marinade.

5Grill chicken on a medium low grill for 15-20 minutes or until cooked through.

6When done, remove it from the grill to a platter and cover it with foil to keep it warm.

7In a large saucepan heat oil over medium high heat and add onion and stir.

8Cook covered for 15 minutes and then add the raisins, sugar, cloves, cinnamon stick, pepper, ginger and nutmeg.

9Cook covered over low heat until very dark brown but not burned, about 45 minutes.

10Discard the cloves and cinnamon.

11The cloves are hard to see.

13Keep the onion mixture warm.

14Cook the couscous according to the package directions substituting chicken broth for water and placing in the bay leaf.

15When the couscous is done remove the bay leaf and fluff with a fork.

16Season with salt and pepper.

17Place the couscous in the center of a large platter and top with the grilled chicken followed by the caramelized onion and raisin mixture.

18Surround chicken with the cooked carrots and garnish with parsley.
