- 1 1/2 lb. calf liver, cut into serving-size pieces
- flour (as needed)
- 1 large sliced bell pepper
- oil (as needed)
- 1 envelope onion soup mix
- 1 (16 oz.) can stewed tomatoes
- seasoned salt and pepper
Directions

1Coat wide heavy skillet with oil.

2Dust liver with flour. Cook over medium heat until lightly browned on both sides.

3Add oil as needed.

4Remove from pan.

5Add onion and pepper to pan. Cook until onion is soft.

6Remove.

7Put liver back in pan.

8Put vegetables on top.

9Sprinkle with soup; pour tomatoes over all. Season to taste.

10Cook over low heat approximately 25 minutes. Serve over rice.
