Ingredients

  • 2 cup all purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1 cup sugar (or 1/4 cup honey or more depending on sweetness
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 2 cup fruit or vegetable (or more)
  • 2 each eggs
  • 1/2 cup olive oil or 2/3 cup unsalted butter (room temp)
  • 3 tbsp nuts (optional)
  • 1 tbsp milk (optional if batter not right consistency)

Directions

    Lightly oil and flour a bread pan.

    Combine flour, sugar, baking soda, backing powder, cinnamon and nutmeg with whisk.

    Mash/ grate fruit or vegetable and add to dry mixture.

    Crack eggs in bowl adding one at a time.

    Add to mix.

    Add oil.

    Mix all with electric mixer.

    Check consistency.

    Pour into bread pan.

    Bake at 350F for approximately 40 minutes or more until fully baked.

    Fully baked (when tooth pick/ knife inserted at center comes out clean.)

    Variation: NO MIXER: Honey, butter and no nuts.

    Mix dry ingredients with a whisk.

    In separate bowl, mash banana into butter add all wet ingredients then eggs last, one at a time until well combined.

    Add into flour mixture and stir well.

    Bake approximately 40 minutes.
