Mother'S Fruit Cake

Ingredients
- 1 1/2 lb. cut up dates
- 1 lb. candied cherries, cut in half
- 1 lb. candied pineapple, cut up
- 2 c. flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1 tsp. vanilla
- 4 eggs
- 1 c. sugar
- 1 1/2 lb. pecans
Directions

1Mix dates, candied cherries and pineapple with flour; mix until all is covered.

2Set aside.

3In another bowl, mix eggs, sugar and vanilla.

4Beat until frothy.

5Add to fruit mix.

6Add broken up pecans and stir.

7Pack in 2 (8-inch) round pans with hole in middle.

8Can use fruit glass in middle of regular pan. Line pans with brown paper.

9Bake in 275° oven for 1 1/2 to 2 hours.

10Let set 5 minutes and peel off paper.

11This cake will keep for up to 3 months.
