Mother'S Fruit Cake

Ingredients

  • 1 lb. butter
  • 2 c. sugar
  • 6 eggs
  • 4 c. flour (cake flour sifted, then measure)
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 lb. candied cherries (red and green)
  • 1/2 lb. candied pineapple
  • 1 lb. chopped pecans (1 qt. or more)
  • 2 tsp. vanilla

Directions

    Cream butter and sugar; add eggs 1 at a time, beating well after each.

    Add 3 cups flour, baking powder, salt and vanilla. Mix remaining 1 cup flour with fruit and coat well.

    Add to batter; mix well.

    Pour in tube pan that has been lined and greased with brown paper.

    Bake at 250° for 3 hours or until toothpick comes out clean.

    Allow cake to cool in pan.
