  • 1 large eggplant, pared and cut into 1/2-inch slices
  • 1/4 c. margarine for browning
  • 1 lb. lean ground beef
  • 1 c. tomato sauce
  • 1/2 tsp. salt
  • 1 envelope onion soup mix
  • 1 pt. sour cream
  • 2 eggs, beaten
  • 2 Tbsp. grated Parmesan cheese

Directions

    Lightly coat eggplant slices with flour.

    Brown on both sides and set aside.

    Preheat oven to 375°.

    Brown meat, then stir in tomato sauce and salt.
