  • 2 medium eggplants
  • vegetable oil
  • 1 lb. lean ground beef
  • 2 medium onions, peeled and chopped
  • 2 cloves garlic, peeled and crushed
  • 1 (8 oz.) can tomato sauce
  • 1 tsp. dried leaf oregano
  • 1 tsp. salt, divided
  • 1/4 tsp. black pepper, divided
  • 2 Tbsp. butter or margarine
  • 2 Tbsp. all-purpose flour
  • 1 c. low-fat milk
  • 1 egg
  • 1/3 c. grated Parmesan cheese

Directions

    Peel eggplants; slice 1/4-inch thick. Brush rimmed cookie sheet with oil. Coat each slice of eggplant on both sides with oil; place on cookie sheet.

    Broil close to broiler until brown. Turn; brush with oil, if necessary.

    Brown the other side. Repeat with all the eggplant slices.
