  • 8 boneless chicken breasts
  • 2 eggs, beaten
  • 1 pkg. Town House crackers
  • 1 Tbsp. parsley flakes
  • garlic salt to taste
  • salt and pepper to taste
  • 2 Tbsp. butter
  • 2 chicken bouillon cubes
  • 1 c. hot water
  • 8 slices Mozzarella cheese

Directions

    Soak chicken in eggs for 2 hours.

    Roll crackers into fine crumbs and mix with parsley flakes and garlic salt.

    Roll chicken in crumb mixture.

    Brown both sides in butter in skillet.

    Melt 2 tablespoons of butter in baking dish.

    Place chicken in dish. Dissolve chicken bouillon cubes in hot water and pour over chicken. Bake at 350° for 45 to 60 minutes.

    Last 10 minutes place 1 slice Mozzarella cheese on each breast.
