Much Lighter Chicken Casserole

- 2 Tbsp. margarine
- 6 Tbsp. flour
- 1 1/4 c. defatted chicken stock
- 1 c. nonfat milk
- 1/8 tsp. salt
- 1/8 tsp. garlic powder
- 1/8 tsp. pepper
- 4 c. cooked chicken (no skin)
- 1/4 c. light mayonnaise
- 2 c. diced celery
- 2 Tbsp. chopped onion
- 2 Tbsp. lemon juice
- 2 c. cooked, cooled rice
- 1/4 c. sliced almonds, toasted in 350~ oven 8 to 10 minutes
Directions

1Melt margarine in a medium saucepan.

2Add flour and stir over medium heat for 1 minute.

3Do not brown.

4Add chicken stock and nonfat milk.

5Whisk over medium heat until mixture comes to a boil.

6Add salt, garlic powder and pepper; continue to cook for 1 minute more.

7In mixing bowl, combine sauce, chicken, mayonnaise, celery, onion, lemon juice and rice.

8Mix well and pour into a casserole sprayed with Pam.

9Top with almonds and bake at 350° for 50 to 60 minutes.
