- 4 tsp. baking powder
- 1/2 tsp. salt
- 1 c. cold cooked rice
- 2 eggs, well beaten
- 1 c. milk
- 3 Tbsp. melted butter
Directions

1Mix and sift dry ingredients.

2Add the rice, stirring well, then combine with the milk and eggs which have been mixed together.

3Lastly, stir in the melted butter.

4Turn into well-greased muffin tins and bake in a quick oven (425°) for 25 minutes.
