Ingredients

  • 1 large hen or 5 chicken breasts
  • 6 medium potatoes
  • 1 large onion
  • 2 large cans tomatoes
  • 1 can tomato paste
  • 3 buttons garlic
  • 3 hot peppers
  • 1 tsp. cayenne pepper
  • 2 cans English peas
  • 1 can corn
  • salt and pepper to taste

Directions

    Cook chicken and cut up.

    To the stock, add diced onions, potatoes, garlic, hot peppers, cayenne pepper and tomatoes.

    Cook slowly for 2 hours.

    Add tomato paste, diced chicken and English peas.

    Simmer for 30 minutes.

    Thicken with more tomato paste or flour mixture, if necessary.

    Add corn just before serving and stir frequently to keep from scorching.
