  • 1 brown onion large
  • 1 tablespoon crushed garlic
  • 1 teaspoon curry powder
  • 3 tomatoes
  • salt
  • 1/4 cup water
  • 1 carrot large, steamed
  • 1 large potato steamed
  • 1 sweet potato small, steamed
  • 1/4 packet beans frozen, steamed
  • 1/4 cauliflower steamed
  • 1 can coconut cream
  • 1/2 lemon
  • raisins

Directions

    Fry onion, add salt, garlic, cook another minute, add curry powder.

    Add tomatoes, cook well. Salt.

    Add 1/.4 cup water and cook until reduced about 5 minutes.

    Add other vegetables and raisins. Pour over cocnut cream and lemon juice and stir to combine.

    Serve with rice.
