Mushroom Macaroni

  • 1 onion, chopped
  • 1 lb. mushrooms, sliced
  • 2 Tbsp. oil
  • 1/4 lb. butter
  • 3 Tbsp. flour
  • 2 c. milk
  • salt and pepper
  • pinch of cayenne pepper
  • 1/2 c. dry bread crumbs
  • 1/4 c. grated Parmesan cheese
  • 3 1/2 c. cooked macaroni (about 1/2 lb. dry)
  • 3 Tbsp. chopped fresh parsley

Directions

    Heat oven to 350°.

    Saute onions and mushrooms in 1 tablespoon oil and 3 tablespoons butter for about 15 minutes.

    Add another 3 tablespoons butter and stir until melted.

    Stir in flour until smooth.

    Gradually stir in milk.

    Add 1 1/2 teaspoons salt, 1/2 teaspoon pepper and the cayenne.

    Bring to boil and cook for 1 minute.

    Stir in macaroni and 2 tablespoons parsley.

    Put in a 2-quart casserole.

    Melt remaining 2 tablespoons of butter. Combine bread crumbs, Parmesan cheese, 1 tablespoon parsley, 1 tablespoon oil and the melted butter.

    Sprinkle on top.

    Bake until browned, about 25 minutes.
