Mushroom Macaroni

Ingredients
- 1 onion, chopped
- 1 lb. mushrooms, sliced
- 2 Tbsp. oil
- 1/4 lb. butter
- 3 Tbsp. flour
- 2 c. milk
- salt and pepper
- pinch of cayenne pepper
- 1/2 c. dry bread crumbs
- 1/4 c. grated Parmesan cheese
- 3 1/2 c. cooked macaroni (about 1/2 lb. dry)
- 3 Tbsp. chopped fresh parsley
Directions

1Heat oven to 350°.

2Saute onions and mushrooms in 1 tablespoon oil and 3 tablespoons butter for about 15 minutes.

3Add another 3 tablespoons butter and stir until melted.

4Stir in flour until smooth.

5Gradually stir in milk.

6Add 1 1/2 teaspoons salt, 1/2 teaspoon pepper and the cayenne.

7Bring to boil and cook for 1 minute.

8Stir in macaroni and 2 tablespoons parsley.

9Put in a 2-quart casserole.

10Melt remaining 2 tablespoons of butter. Combine bread crumbs, Parmesan cheese, 1 tablespoon parsley, 1 tablespoon oil and the melted butter.

11Sprinkle on top.

12Bake until browned, about 25 minutes.
