- 3/4 pound penne pasta
- 4 Hellmann''s Light Mayonnaise dollops*
- 1 5/8 cups cherry tomatoes
- 2 5/8 cups mushrooms
- 1 onion
- 250ml semi-skimmed milk
- 1 1/3 tablespoons chopped parsley fresh
- 2 tablespoons oil
- grated Parmesan to serve
Directions

1Cook the pasta according to the pack instructions and drain.

2Finely chop up the onion, slice the mushrooms and halve the cherry tomatoes.

3Fry the chopped onion in a non-stick frying pan with the oil. Add the mushrooms and fry until brown.

4Whisk the milk and mayonnaise and add to the pan.

5Add the cherry tomatoes to the sauce and heat through.

6Stir in the cooked and drained pasta. Garnish with parsley and serve.
