  • 3/4 pound penne pasta
  • 4 Hellmann''s Light Mayonnaise dollops*
  • 1 5/8 cups cherry tomatoes
  • 2 5/8 cups mushrooms
  • 1 onion
  • 250ml semi-skimmed milk
  • 1 1/3 tablespoons chopped parsley fresh
  • 2 tablespoons oil
  • grated Parmesan to serve

Directions

    Cook the pasta according to the pack instructions and drain.

    Finely chop up the onion, slice the mushrooms and halve the cherry tomatoes.

    Fry the chopped onion in a non-stick frying pan with the oil. Add the mushrooms and fry until brown.

    Whisk the milk and mayonnaise and add to the pan.

    Add the cherry tomatoes to the sauce and heat through.

    Stir in the cooked and drained pasta. Garnish with parsley and serve.
