Mushroom Quiche

Ingredients

  • 1 (9-inch) baked pie shell
  • 1/2 lb. mushrooms, sliced
  • 1/4 c. onions, chopped
  • 1 Tbsp. butter
  • 1 c. (4 oz.) shredded Swiss cheese
  • 4 eggs
  • 1 c. half and half or milk
  • 1/4 c. grated Parmesan cheese
  • 4 slices bacon, fried, drained and crumbled
  • salt and pepper as desired

Directions

    Fry the mushrooms and onions in the butter until cooked. Spread in the pie shell.

    Add the Swiss cheese.

    Beat the eggs and milk together and pour over the mushrooms and cheese in the pie shell.

    Add salt and pepper, if desired.

    Top with the Parmesan cheese and crumbled bacon.
