- 1/4 cup olive oil
- 2 garlic cloves, minced
- 1 cup diced tomato, canned with juices
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon dried oregano
- 1 pinch hot pepper flakes
- 2 lbs mussels, scrubbed
Directions

1in a large heavy saucepan heat oil over med-high heat.

2saute garlic until aromatic about 30 secs.

3add tomatoes, parsley, oregano and hot pepper flakes; reduce heat and simmer for 10 minutes.

4add mussels, cover and simmer for 3 to 4 minutes or until mussels open.

5discard any that do not open.
