- 6 medium potatoes
- 1 medium onion
- 6 Tbsp. margarine
- 3 Tbsp. flour
- 1 1/2 c. stock or 2 bouillon cubes, dissolved in 1 1/2 c. hot water
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/4 c. mustard
Directions

1Cook and dice potatoes.

2Dice the onion.

3Melt the margarine and cook onion until limp.

4Stir in the flour and add the stock. Cook over low heat and add the salt, pepper and the mustard.

5Cook slowly, about ten minutes or until slightly thickened.

6Pour over the potatoes and bake about 15 minutes in 350° oven.

7Especially good with ham, ham loaf or chicken.
