Mustard Potatoes

Ingredients

  • 6 medium potatoes
  • 1 medium onion
  • 6 Tbsp. margarine
  • 3 Tbsp. flour
  • 1 1/2 c. stock or 2 bouillon cubes, dissolved in 1 1/2 c. hot water
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 c. mustard

Directions

    Cook and dice potatoes.

    Dice the onion.

    Melt the margarine and cook onion until limp.
  4. 4
    Stir in the flour and add the stock. Cook over low heat and add the salt, pepper and the mustard.

    Cook slowly, about ten minutes or until slightly thickened.

    Pour over the potatoes and bake about 15 minutes in 350° oven.

    Especially good with ham, ham loaf or chicken.
