Mustard Potatoes

  • 1 medium onion, chopped
  • 3 Tbsp. butter or oleo
  • 3 Tbsp. flour
  • 1 1/2 c. beef bouillon
  • 1/4 c. mustard
  • hot, cooked potatoes, boiled
  • salt and pepper
  • buttered bread crumbs

Directions

    Saute onion in butter until limp.

    Stir in flour until smooth; add bouillon.

    Cook until bubbly.

    Season with salt, pepper and mustard.

    Slice potatoes in baking dish; pour mixture over potatoes.

    Sprinkle with bread crumbs and bake at 375° until crumbs are browned.

    Sauce may be made ahead and heated when needed.
