- 1 medium onion, chopped
- 3 Tbsp. butter or oleo
- 3 Tbsp. flour
- 1 1/2 c. beef bouillon
- 1/4 c. mustard
- hot, cooked potatoes, boiled
- salt and pepper
- buttered bread crumbs
Directions

1Saute onion in butter until limp.

2Stir in flour until smooth; add bouillon.

3Cook until bubbly.

4Season with salt, pepper and mustard.

5Slice potatoes in baking dish; pour mixture over potatoes.

6Sprinkle with bread crumbs and bake at 375° until crumbs are browned.

7Sauce may be made ahead and heated when needed.
