Ingredients

  • 1 whole Potato
  • 2 stalks Celery
  • 2 whole Carrots
  • 1 whole Onion
  • 2 cloves Garlic
  • 1 teaspoon Tomato Paste
  • 1 teaspoon Parsley
  • Meat Bones

Directions

    In a large stock pot combine the potato, celery, carrots, onion, garlic, tomato paste and parsley. Add salt to your taste.

    Then add either chicken, veal bones or beef bones. Add enough water to cover everything. Bring to a boil.

    Once it boils you can remove any excess oil or foam that has come to the top.

    Continue at a low boil for one hour. If the bones have meat on it remove and reserve to eat (it is very tasty).

    Strain the soup and return to the pot. At this point add more salt if needed and cook noodle of your choice right in the broth.

    This broth can also be used as a stock for other dishes.
