- 2 large eggplants (peeled, sliced 1 inch thick)
- salt (as needed)
- flour (as needed)
- canola oil (as needed)
- 1 tablespoon butter
- 1 small onion (minced)
- 34 lb ground beef
- 14 lb ground pork
- 2 teaspoons salt
- 14 teaspoon fresh cracked pepper
- 1 pinch fresh grated nutmeg
- 1 tablespoon parsley (minced)
- 1 12 tablespoons tomato sauce
- 12 cup dry red wine
- 14 cup boiling water
- 1 egg (beaten)
- 12 cup kefalotyri cheese (grated)
- 12-23 cup fresh breadcrumb (toasted, ground fine)
- 2 tablespoons butter
- 1 tablespoon flour
- 1 12 cups evaporated milk
- 12 cup heavy cream
- 1 egg (beaten)
- 3 egg yolks (beaten)
- 12 teaspoon salt
- 18 teaspoon fresh grated nutmeg
- 13 cup kefalotyri cheese (grated)
Directions

1Salt eggplant slices.

2Lay out on racks to drain.

3Let stand 30 minutes.

4Rinse.

5Return to racks for 10 minutes to drain.

6Squeeze between paper towels to absorb excess moisture.

7Dredge in flour to coat.

8Heat about an inch of oil in a deep skillet.

9Fry slices until golden on each side, in batches.

10Drain on paper towels.

11Heat oven 375.

12In a saucepan heat butter.

13Add onion.

14Saute 2 minutes.

15Add beef and pork.

16Brown well.

17Add the salt, pepper, nutmeg, parsley, tomato sauce, red wine and water.

18Bring to a boil.

19Reduce.

20Cover.

21Simmer 30-40 minutes, or until thickened.

22Remove from heat.

23Whisk in the egg, cheese and 1/4-1/3 of the breadcrumbs to thicken.

24Set aside.

25Spray a 9x13 baking dish.

26Scatter remaning crumbs on the bottom.

27Top with 1/2 of the eggplant slices.

28Then meat sauce.

29Then remaining eggplant.

30Meanwhile, melt butter in a saucepan.

32Cook 1minute.

33Whisk in the milk and cream.

34Simmer, stirring often until thickened, about 15 minutes.

36Whisk in the egg, yloks, salt, nutmeg and half of the cheese until incorporated.

37Pour over eggplant.

38Top with remaining cheese.

39Bake 45 minutes.

40Let stand 10-15 minutes before slicing.
