Ingredients
- 3 eggs
- 1 c. brown sugar
- 1 c. granulated sugar
- 1 c. vegetable oil
- 2 1/2 c. grated zucchini
- 1 tsp. vanilla
- 3 c. all-purpose flour
- 1/2 tsp. cinnamon
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. salt
- 1 1/2 c. walnuts, chopped
- 3/4 c. raisins or dates (optional)
Directions

1Heat oven to 325°.

2Beat eggs until frothy.

3Stir in sugars, oil, zucchini and vanilla.

4Combine flour, cinnamon, baking powder, baking soda and salt; stir into zucchini mixture until well mixed.

5Stir in nuts and raisins.

6Pour into a well-greased Bundt pan.

7Bake for 1 hour.

8Cool for 15 minutes in pan; remove to a wire rack.

9Slice when cooled.
