Ingredients

  • 1 (10 1/2 oz.) can cream of chicken soup
  • 1 c. shredded Cheddar cheese
  • 2/3 c. evaporated milk
  • 4 oz. diced green chiles (mild)
  • 1/2 c. chopped green onion
  • 1 1/2 c. coarsely crushed tortilla chips
  • 3 c. cubed, cooked chicken

Directions

    In a bowl, combine soup, 2/3 cup cheese, milk, chile peppers and green onion.

    Put 1/2 cup chips in bottom of 1 1/2-quart casserole. Top with 1/2 of the chicken cubes. Top with 1/2 of the soup mix. Repeat layers (chips, chicken and soup).

    Sprinkle top with remaining Cheddar cheese. Bake at 350° for 20 to 25 minutes. Garnish edges with tomatoes, black olives and tortilla chips, if desired.
