  • 4 None flour tortillas, round edges trimmed
  • 2 tbsp oil
  • 1 can (15 oz) red kidney beans, drained and lightly mashed
  • 1 tsp chili powder
  • 1 None avocado, pitted, peeled and coarsely chopped
  • 1/2 small red onion, finely chopped
  • 2 tbsp chopped cilantro leaves, plus additional leaves, for garnish
  • 1 None banana chili pepper, seeded and finely chopped
  • 2 tsp lime juice
  • 1/2 cup light sour cream
  • 6 None cherry tomatoes, diced

Directions

    Preheat the oven to 350°F. Line a baking pan with foil.

    Brush tortillas with half the oil. Cut each into 6 rectangles. Arrange on prepared pan. Bake for 4-6 mins, turning once. Cool.

    Combine kidney beans, chili powder and remaining oil in a medium bowl. Season to taste.

    Combine avocado, onion, cilantro, chili pepper and lime juice in a medium bowl. Season to taste.

    Arrange baked tortilla pieces on a serving platter. Top each with 1 tsp kidney bean mixture, a little avocado mixture, sour cream and diced tomato. Garnish with a cilantro leaf.
