Ingredients

  • 2 dozen LITTLE neck clams..the smaller the better
  • 1 cup fresh grated italian bread
  • 6 tablespoons freshly chopped parsley
  • 4 tablespoons freshly chopped garlic
  • 2 tablespoons freshly chopped oregano
  • Juice of one fresh lemon
  • salt and pepper to taste
  • 1/2 cup of good olive oil
  • water to moisten if needed

    Open fresh clams...

    Mix all ingredients except water in a bowl.....add enough water to thoroughly moisten mixture....I typically use about 1/3 of a cup...use a teaspoon and mold a rounded teaspoon of mixture over clams...place on a cookie sheet..Heat oven to 375...before cooking (aproximately 25 minutes) drizzle a little olive oil over clams to moisten more...enjoy
