Ingredients
- 2 c. rice
- 1 1/2 lb. sausage (can also use luncheon meat, cut up)
- 2 medium onions
- 4 to 5 stalks celery
- 2 to 3 carrots
- peas or leftovers (corn or beans)
- 1 egg
- salt and pepper to taste
- soy sauce to taste
Directions

1Rinse rice and cook.

2(Can use brown rice.)

3Fry sausage and take out of pan, leaving meat grease.

4Fry onions, celery and carrots in drippings.

5Add rice and sausage (cooked earlier).

6Add peas or leftovers (corn, beans, whatever).

7Mix all together.

8Make well in middle and add egg until scrambled.

9Mix into rice mixture. Add salt, pepper and soy sauce.

10Heat through and serve.
