- 2 tablespoons sugar (7/8 oz)
- 1/2 teaspoon active dry yeast
- 5 1/2 cups flour (1 lb 12 oz)
- 2 tablespoons kosher salt (3/4 oz)
- 1 tablespoon extra virgin olive oil, plus more (1/2 oz)
Directions

1Combine sugar, olive oil, yeast, and 2 cups cold water in bowl of a stand mixer fitted with a dough hook.

2Let sit until foamy, about 8-10 minutes.

3Mix flour and salt in a bowl.

4With motor running, slowly add flour mixture.

5Mix until a smooth dough forms, about 8-10 minutes.

6Transfer dough to a greased baking sheet.

7Cover with plastic wrap.

8Let sit at room temperature 1 hour.

9Divide dough into 4 balls.

10Transfer to a greased 9 inch by 13 inch dish.

11Brush tops with olive oil.

12Cover with plastic wrap.

13Refrigerate for 48 hours. Makes four 12 oz balls.
