Navy Bean Soup

  • 1 c. dried navy beans
  • 3 qt. water
  • 1 can tomatoes
  • 1 c. diced celery
  • 1 diced carrot
  • 1 diced potato
  • 1/4 c. uncooked rice
  • 1/3 c. chopped onion
  • 1 beef bouillon cube
  • 1 Tbsp. salt
  • 1 Tbsp. pepper
  • 1/2 lb. beef

Directions

    Bring beans and water to a boil for 2 minutes, then let soak 1 hour.

    Simmer for 20 minutes.

    Add tomatoes, celery, carrot, potato, uncooked rice, onion, bouillon and seasonings.

    Brown beef.

    Bring soup to boil.

    Add meat; cover and simmer.
