- 3/4 cup Israeli couscous
- 1/3 cup chopped Vidalia or other sweet onion
- 3 tablespoons chopped fresh basil
- 2 tablespoons fresh orange juice
- 1/4 teaspoon salt
- 1 medium nectarine, diced
Directions

1Bring water to a boil. Add couscous. Reduce heat to medium-low; cover and simmer 8 minutes or until liquid is absorbed. Stir in onion, basil, orange juice, salt, and nectarine.
