Nectarine Crumble Muffins

Ingredients

  • 75 g self-raising flour
  • 125 g melted butter
  • 110 g caster sugar
  • 125 ml sour cream
  • 2 large eggs
  • 2 tbsp custard powder
  • 1 tsp vanilla essence
  • 4 None nectarines, stones removed, thinly sliced
  • -1 None Crumble topping
  • 40 g plain flour
  • 50 g brown sugar
  • 1/2 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 25 g chopped chilled butter

    Preheat oven to 180°C./ 160°C. fan. Gas mark 4. Line a 12-hole muffin pan with paper muffin cases.

    In a large bowl, using an electric mixer, beat flour, butter, sugar, sour cream. eggs, custard powder and vanilla together on low for 2-3 minutes, until smooth. Stir three-quarters of the chopped nectarines through.

    Spoon mixture into cases, until two-thirds full. Press extra nectarine slices on top of each muffin.

    To make crumble topping, in a small bowl, combine all ingredients. Using fingertips, rub in butter to form crumbs. Sprinkle topping evenly over top of each muffin.

    Bake 25-30 minutes, until cooked when tested with a skewer. Transfer to a wire rack to cool completely. Store in an airtight container.
