- 8 Tbsp. sugar
- 1 Tbsp. cornstarch
- 1/2 c. water
- 3 egg whites
- 1/8 tsp. salt
- 1/2 tsp. vanilla
Directions

1Preheat the oven to 350°. Combine 2 tablespoons sugar and cornstarch in small saucepan. Stir in water. Cook, stirring, over medium heat until thick and clear.

2Cool.

3Beat egg whites, salt and vanilla until soft mounds form.

4Add remaining sugar gradually, beating well after each addition. Add cornstarch mixture.

5Continue beating until meringue stands in stiff peaks. Mound onto cooled pie, sealing edges to pastry shell. Bake 10 to 12 minutes or until golden brown.

6Let pie cool at least 2 hours before cutting.
