- 1/3 c. butter
- 1/2 c. brown sugar
- 1 (1 lb. 2 oz.) can pineapple, drained
- 1 1/2 c. flour
- 1 c. sugar
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/3 c. soft shortening
- 2/3 c. milk
- 1 tsp. vanilla
- 1 egg
Directions

1Melt butter in heavy 10-inch skillet or square pan.

2Sprinkle brown sugar evenly over butter.

3Arrange pineapple in pattern over brown sugar.

4Sift flour, sugar, baking powder and salt together; add shortening, milk and vanilla.

5Beat for 2 minutes.

6Add egg; beat 2 more minutes.

7Pour over fruit.

8Bake at 350° for 40 to 50 minutes.

9Turn cake upside-down on serving plate.

10Leave pan over cake for 10 minutes.
