New Crush Potatoes

  • 2 12 lbs small waxy potatoes
  • 1 teaspoon salt
  • 13 cup chopped of fresh mint
  • 14 cup chopped fresh chives
  • 14 butter
  • salt and pepper

Directions

    Place potatoes in saucepan.

    Add boiling water and bring to a boil over high heat.

    Reduce heat to medium, cover and cook until potatoes are tender all the way through, 15-20 minutes.

    Drain potatoes.

    Wipe pot clean and return potatoes to saucepan over low heat.

    Crush potatoes with a fork against the sides of the pan.

    Mash in mint, chives and butter until potatoes are crushed into uniform pieces.

    Season to taste with salt and pepper.
