- 30 small new potatoes
- salt and pepper to taste
- 1 1/2 c. fat free half and half
- 3 Tbsp. bacon drippings
- 2 Tbsp. butter
- 2 Tbsp. corn starch
- salt and pepper to taste
- green onions, chopped (optional)
- 2 pieces bacon, crumbled
Directions

1Scrape the peel off of the potatoes.

2Wash well.

3Cover with cold water; cover and bring to a boil.

4Cook until fork tender, approximately 15 minutes after they come to a boil.

5Add bacon drippings and butter and stir.

6Mix cornstarch with 1 cup of half and half and add to the potatoes stirring well.

7Add the rest of the half and half, salt and pepper.

8Stir frequently to keep from sticking and scorching.

9Cook until smooth and it thickens. Garnish with chopped green onions and crispy fried bacon.
