New York Spaghetti Pie

- 8 oz. spaghetti
- 2 eggs
- 1/4 c. grated Parmesan cheese
- 2 Tbsp. butter or margarine
- 1/2 c. chopped green bell pepper
- 1/3 c. chopped onion
- 1 c. dairy sour cream
- 1 lb. Italian bulk sausage
- 1 (6 oz.) can tomato paste
- 1 c. water
- 4 oz. sliced Mozzarella cheese
Directions

1Heat oven to 350°.

2Break spaghetti in half and cook in salted water until barely tender.

3Drain.

4Beat eggs; add Parmesan cheese and toss with warm spaghetti.

5Put spaghetti mixture in greased 10-inch pie pan.

6Melt butter or margarine in a medium skillet; add green pepper and onion.

7Saute for 5 to 7 minutes.

8Do not brown. Add sour cream to vegetables; mix and spoon over spaghetti.

9Cook sausage; drain off grease.

10Add tomato paste mixed with water. Simmer for 10 minutes.

11Spoon tomato sauce over sour cream mixture. Bake for 25 minutes.

12Cut cheese in strips and arrange over top. Return to oven for 3 to 4 minutes, or until cheese is melted.
