  • 1 None lemon, juiced
  • 1 clove garlic, crushed
  • 1 tsp olive oil
  • 1 pint cherry tomatoes, halved
  • 1 None pepper, seeded and sliced
  • 1/2 cup canned artichoke halves, chopped
  • 1 can (7 oz) tuna, drained and flaked
  • 2 None hard-boiled eggs, coarsely chopped
  • 1 small cucumber, sliced
  • 1/4 cup basil leaves
  • 4 pieces lavash bread or flour tortillas

Directions

    For the dressing, whisk lemon juice, garlic and oil in a small bowl. Season to taste.

    Place tomatoes, pepper, artichokes, tuna, eggs, cucumber and basil in a large bowl.. Drizzle with dressing; toss to combine.

    Place each lavash on a flat surface and top with salad. Roll up, halve and serve.
