"No Excuse" Bread

Ingredients
- 3 lb. freshly ground whole wheat flour
- 1 qt. warm water, whey, potato water or milk
- 1 tsp. salt
- 1 tsp. honey, raw sugar or unsulphured molasses
- 1 pkg. dry yeast
Directions

1Have all ingredients at room temperature.

2Soften yeast in a little warm water.

3Add honey, sugar or molasses and set aside about 15 minutes (while you eat breakfast or wash dishes).

4Mix flour and salt; gradually stir in yeast mixture.

5Add water or milk until dough is consistency of thick porridge (more moist than the usual bread dough).

6Spoon dough into 3 greased loaf pans. Set in warm place until dough rises nearly to the top of pans. (This will allow another 20 to 30 minutes to do odds and ends about the house.)

7Bake 45 to 60 minutes at 375° until crusty. Turn out on rack to cool.
