- 2 c. fat-free crackers, crushed finely
- 1/4 tsp. dry mustard powder
- 1 egg white
- 2 Tbsp. nonfat milk
- 1 lb. fish fillets of choice
- lemon wedges (optional)
Directions

1Preheat oven to 425°.

2Crush crackers; stir in dry mustard. Beat egg white with milk in a broad shallow bowl.

3Spread cracker crumbs on a plate.

4Dip fish fillets one at a time into egg mixture, then place in cracker crumbs and turn to coat all surfaces.

5Place on baking sheet and bake at 425° for about 15 minutes until coating is crisp and fish flakes easily with a fork. Serve with lemon wedges if desired.
