No-Fat Oven Fried Fish

  • 2 c. fat-free crackers, crushed finely
  • 1/4 tsp. dry mustard powder
  • 1 egg white
  • 2 Tbsp. nonfat milk
  • 1 lb. fish fillets of choice
  • lemon wedges (optional)

Directions

    Preheat oven to 425°.

    Crush crackers; stir in dry mustard. Beat egg white with milk in a broad shallow bowl.

    Spread cracker crumbs on a plate.

    Dip fish fillets one at a time into egg mixture, then place in cracker crumbs and turn to coat all surfaces.

    Place on baking sheet and bake at 425° for about 15 minutes until coating is crisp and fish flakes easily with a fork. Serve with lemon wedges if desired.
