Ingredients
- 1 (8 oz.) pkg. medium noodles, cooked and drained
- 2 pkg. (10 oz. each) chopped spinach, defrosted
- 1/2 c. melted butter
- 1/2 lb. sliced mushrooms
- 2 eggs, well beaten
- 1 c. sour cream
- 1/2 c. grated Parmesan cheese
- salt and pepper to taste
- fine breadcrumbs to coat pan
Directions

1Saute mushrooms in 1/2 cup butter until tender.

2Combine all the ingredients and mix well.

3Butter and crumb a 2-quart ring mold.

4Place mixture in mold, cover with foil and bake in 350° oven for 45 minutes.

5Remove from oven, loosen sides by running a knife along the edge and invert immediately on a platter.

6Fill center with whole mushrooms that were sauteed in butter.

7Serves 8.
