  • 1 pound Green Beans (trim Off The Stems)
  • 2 Green Onions, Thinly Sliced
  • 1 clove Garlic, Minced
  • 2 Tablespoons Minced Fresh Parsley (or 2 Tsp Minced Dried Parsley)
  • 1 teaspoon Dijon Mustard (or More To Taste)
  • 2 Tablespoons Olive Oil
  • 1 Tablespoon Red Wine Vinegar
  • 1/4 teaspoons Pepper
  • 1/2 teaspoons Salt

    1. Place beans in a large saucepan and cover with water. Bring to a boil. Cover and cook 4-7 minutes or until crisp tender.

    2. Meanwhile, in a small bowl, combine the remaining ingredients. Drain beans; stir in the onion mixture and heat through in the saucepan. (After adding the onion mixture, cook/heat through as long as desired. Sometimes I cook this on low-medium heat for about 10 minutes. It seems to have more flavor this way).
