- 2/3 cup dried red dates
- 1/2 cup cashews
- 1/2 cup sunflower kernels
- 1 tsp basil seed
- 2 tsp sesame seeds
- 15 oz can of ripe black olives
- 1/2 tsp salt
- 3/4 cup grated carrots
- 1/2 cup raisins
- 2 tbsp mirin
- 1/4 cup ponzu this goes into dressing
- 4 oz dried figs chopped
- 1 cup sugar
- 1/3 cup balsamic vinegar
Directions

1take dates rinse soak in water just enough to cover them 30 minutes

2add carrots ,raisins, in a bowl

3in a dry pan add cashews, sesame seeds, and sunflower kernels and heat toast them 3 minutes dont burn

4add nuts to carrots

5remove pitts from dates

6in a pan heat add sugar ponzu and vinegar heat stirring constantly

7to the vinegar add chopped figs stir but let thicken cook for 4 minutes take off heat let sit 3 minutes

8add basil seeds to salad

9add dressing

10add mirin stir well
